Banana Bundt with Frosting.

I had a bunch if bananas that were very spotty so I decided to make cake. But the question was, which one? I was bored of my go-to banana cake do I opened up My Sweet Vegan and picked out the Banana Foster cake recipe. This one is rich with margarine instead of oil, both white and brown sugar and lots of bananas, five I think. The only thing I didn't have was rum so I left it out. And I also didn't top it with caramelized bananas because laziness. So it's just a banana cake minus the foster.

It came out soooo sweet and tender! To be honest it didn't need the frosting though it was delicious and brown sugary. I will def make this again!

BBQ pulled jackfruit sandwich with homemade coleslaw.

To make: 
1. Drain 1 can of young green jackfruit. (Unripe jackfruit) Rinse with water.
2. Put into bowl and dust liberally with a dry BBQ rub. I made my own using a recipe I saw online. 
3. Heat oil in a pan and brown the jackfruit in oil. Once it's browned and softens up you can start shredding it with a fork.
4. On medium heat, add about 1/2 cup BBQ sauce and hot sauce of choice as much as you prefer. 
5. Keep cooking and stirring until BBQ sauce coats all pieces mixture dries up a bit, if it's too wet/watery, keep cooking. 
6. Serve on toasted buns with coleslaw of choice.

Portobello pesto sandwich.

Got this pesto at TJ's and thought I would use it in s grilled portobello sandwich.

Fresh toasted ciabatta bread, grilled portobello (garlic, olive oil and lemon pepper seasoning), fresh spinach tossed in lemon and olive oil. I should have hollowed out the bread a bit.

It was delicious.

Thanksgiving '17 and baby's first!

I cooked a lot but was so busy that I didn't get many shots of food. This is Trader Joes Breaded Turkeyless Roast. It was huge, so different from last year's at Christmas. I think it's from a different food manufacturer but who cares, it was delicious! Great texture and flavor.

My plate: the roast along with mashed potatoes and orange herb gravy, herb stuffing, baked sweet potatoes and apples, mustard green beans.  I'm not fancy atThanksgiving, I want it all to come together easy. 

Desserts! Chocolate chocolate chip cookies!

Bryanna Clark Grogan's pumpkin pie and Coco whip.

 The little bambino ate mashed sweet potatoes and apples, mashed potatoes and he tried some baby food turkey and gravy that my non-vegan husband bought for him. So far this guy loves his veggies best. When he's older, he can decide if he wants to be vegan like mama. For right now, he's on formula that is for babies with dairy allergies but the formula itself is not vegan. It basically has milk proteins in it that are broken down for easy digestion. There is only one kind to buy and its specialized and expensive!

Peanut Noodles and Roasted Miso Broccoli

Yum yum yum!!!! I opened up the September issue of Jamie Magazine (got a year subscription for Christmas last year) and found these two recipes that were calling my name. So glad I tried them because together they were so good!

I added a touch of agave to my peanut sauce because I felt like it needed a little sweetness.

Making the miso sauce for the broccoli. Everything was very quick to get together. Minimal ingredients is great for me right now.

Before going into oven and after being drizzled with miso sauce.

Spaghetti Noodles tossed with the peanut sauce and then mixed with scallions and the roasted broccoli! Topped with sesame seeds.

Chili and Pumpkin Cornbread

When I saw Vegan Richa's recipe for pumpkin cornbread, I thought it was genius. How perfect for Fall with a bowl of spicy bean chili! 

I used fresh pumpkin purée that I made from my son's jack o lantern from Halloween and it was perfect.

They baked up so tender! One of the recipe modifications was to add a bit of sugar to the batter if you like it sweeter. I did this.

A vat of vegan chili. I cheated and used a packet of McCormick chili mix and added: onion, peppers, diced tomatoes, tomato sauce, soy chunks, pinto beans and kidney beans. It was easy and I didn't have to scan my spice rack for anything. I did season with salt.

This was the mix I used.

Soooooo goooood!

Make these today!
